Easy cucumber tomato onion salad recipe that is also healthy and quick to make. In addition, it is vegan, gluten-free and customizable!


  • 1 large or 2 medium cucumbers (chopped)
  • 4 medium tomatoes (chopped)
  • 1/4 red onion (chopped)
  • 1 small handful parsley (chopped)
  • 1 tbsp olive oil
  • 1 tbsp freshly squeezed lemon juice
  • salt to taste


  1. Dice the cucumbers, tomatoes, onions and then chop the parsley into small pieces.
  2. In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, and salt.
  3. Pour the dressing over the vegetables. Toss gently to coat. Serve.
