These vegan peanut butter energy balls are so addicting, rich, and also naturally sweetened. In addition, they are healthy, quick, gluten-free, and no-bake!
These vegan truffles are so decadent but they are healthy. Since you do not have to bake them, they come together so fast when you need something sweet.
There is no sugar added so they are sweetened with delicious and healthy dates. We will also be using cacao powder for chocolate flavor and it makes these energy balls so delicious!
I am a huge fan of raw, no bake healthy dessert as you can tell from my no bake brownies, vegan cheesecake, or no bake cookie dough bars. Since they come together quickly and no baking involved, you can make them any time just like vegan peanut butter balls, chocolate coconut date balls, almond butter energy balls or vegan coconut balls!
Before we jump into the recipe, let's talk about how you can customize it and learn some tips.
How to make Peanut Butter Energy Balls
Ingredients
You only need a few simple ingredients to make this delicious dessert or snack. You can also change up the ingredients easily to suit your taste.
Almond flour
We will be using almond flour for this recipe but you can grind up some oats in your blender and use oat flour instead.
Peanut butter
These are peanut butter energy balls but you can easily swap the peanut butter for almond or cashew butter. To keep this recipe nut-free, you can use sun butter (sunflower seed butter) instead.
Medjool Dates
They are sweetened with Medjool dates so we are keeping this recipe sugar-free and healthy. Dates are my favorite so I made walnuts and dates energy balls as well.
Shredded Coconut
To give a little coconut flavor, we will use shredded coconut but you can omit if you like. You can also add more if you are a fan of coconut like I am!
Cacao Powder
Cacao powder gives these energy balls an amazing chocolate flavor and also makes them taste like truffles! We will coat some of the balls with cacao powder as well as an option.
Coconut Oil
A little bit of coconut oil helps with the stickiness so I don't recommend omitting it. We will also be adding just a little bit of water for easier blending.
How to make Peanut Butter Energy Balls step by step
- First, you will need to add the pitted dates into a food processor or blender (I prefer food processor for this recipe) and then blend until a paste is formed.
- And then you will add the rest of the ingredients into the food processor along with water and oil, pulse it until you have a paste consistency.
- Now, you can use a cookie scoop or your hands and scoop out 1-tbsp amounts of the mixture to roll into balls between the palms of your hands.
- Optional: Empty a small amount of cacao powder and a small amount of shredded coconut into 2 separate plates. Roll the energy balls around to coat with cacao powder and/or shredded coconut.
- If you want them to be firmer, place them in the fridge or freezer for 30 minutes.
Tips & Variations
Since these energy balls are so versatile, here are some variations you can try:
- You can add chocolate chips for more chocolate flavor.
- Also, you can add a vanilla bean or vanilla extract for vanilla flavor.
- You can try adding dried fruit such as raisins, cranberries, or apricots as well.
- Try adding ground flax seeds or chia seeds for a healthier option.

Do Peanut Butter Energy Balls need to be refrigerated
Energy balls should be chilled to firm them up but they are fine at room temperature as well for a day or two. These vegan energy bites will also keep in the fridge for up to 1 week and in the freezer for up to 3 months.
