This vegan teriyaki noodles recipe is gluten free, satisfying, and also so easy to make! In addition, it's made with homemade teriyaki sauce and customizable with veggies.
This Asian-inspired recipe is so much better than take-out and you also know what's in it! Many restaurants don't use quality ingredients and use a lot of oil and salt.
When you make these vegetarian teriyaki noodles from scratch, you can control the ingredients. It comes together quickly but it's full of delicious flavors.
I love making noodles for weeknight dinners so I usually go for peanut noodles, lo mein, vegan chow mein, garlic sesame noodles, vegan noodle bowl, vegan satay noodles or Pad Thai. But this vegan teriyaki noodles recipe is another favorite with healthy veggies just like my chickpea stir fry!
Before we jump into the recipe, let's talk about how you can customize it and learn some tips.
How to make Vegan Teriyaki Noodles
Ingredients
Noodles
You can really use any kind of rice noodles but I usually use wide brown rice noodles. If you are not gluten free, you can use soba noodles instead.
Vegetables
You can customize and use whatever vegetables you want but I used green onions, carrots and snow peas. You can also use broccoli, cabbage, edamame, bell peppers, mushrooms or bok choy if you prefer.
Vegan Teriyaki Sauce
This homemade vegan teriyaki sauce recipe is so easy to make and only takes 5 minutes! It has tamari, maple syrup, coconut sugar, rice vinegar, toasted sesame oil, ginger, garlic, and arrowroot/corn starch.
Toasted Sesame Oil & Sesame Seeds (for garnish)
Toasted sesame oil has much more flavor so I highly recommend it instead of regular sesame oil. I also like adding sesame seeds before serving.
How to make it
- We will start by cooking the noodles according to package instructions without overcooking and then drain well.
- While the noodles are cooking, you can make the vegan teriyaki sauce according to the recipe.
- Next, in a large pan or skillet over medium heat, add the toasted sesame oil. When the oil is hot, add the green onions, carrots and snow peas and then cook for a few minutes until soft.
- Add the cooked noodles into the pan and cook for 1 minute while stirring it. And then add the teriyaki sauce, mix well and cook for another minute. Garnish with sesame seeds.
Tips & Variations
- Always adjust to taste, add salt if needed.
- Feel free to change up the vegetables but keep the proportions the same.
- You can also add tofu for more protein and texture.
- To make it spicy, add Sriracha in the sauce or another favorite hot sauce.
How to store
Leftovers will keep in the refrigerator in a covered air-tight container for up to 5 to 6 days.

- 8 ounces rice noodles (any kind, I used wide brown rice noodles)
- 1 recipe of vegan teriyaki sauce
- 1 cup snow peas
- 1 medium carrot (very thinly sliced)
- 2 green onions (sliced)
- 1 teaspoon toasted sesame oil
- sesame seeds for serving
Instructions
- Start by cooking the noodles according to package instructions without overcooking and drain well.
- While the noodles are cooking, make the vegan teriyaki sauce according to the recipe.

- Add the cooked noodles into the pan and cook for 1 minute while stirring it. Add the teriyaki sauce into that pan, mix well and cook for another minute.
